Stainless Steel

ProsNonreactive (meaning you can cook any kind of food in it), heavy, durable, dishwasher-safe, inexpensive for basic models. Cons: Poor heat transfer and distribution. A better option? You can solve this problem by buying better quality (and higher priced) stainless steel cookware with an added inner core made of copper or aluminum, which improves the heat conductivity. It might be expensive, but it'll last a lifetime. All-Clad is a great example of high-end stainless steel cookware, and it's a favorite brand of Kitchn editors.

Copper

Pros: Excellent thermal conductivity, cooks food evenly. ConsReactive with alkaline or acidic foods, which can take on a metallic taste after being cooked in a copper pot. Light colored foods, like eggs, can also develop grey streaks when they pick up the copper compounds, which also means you'll ingest small amounts of copper. Not a big deal if it's an occasional thing, but not so great for everyday use. Copper also requires regular polishing and maintenance, and it's expensive. A better option?Look for copper pots with a stainless steel or tin lining so you get the best of both worlds: great thermal conductivity, with the safety and versatility of a nonreactive lining.

Aluminum

Pros: Excellent thermal conductivity, lightweight, affordable. Cons: Like copper, raw aluminum is highly reactive to alkaline or acidic foods. It's also very soft and tends to warp in high heat and scratch easily, which leads to health concerns with long term use. A better option? Anodized aluminum has been treated by an electro-chemical process that hardens it, thus solving most of the problems with raw aluminum. It's more expensive than raw aluminum, but also a far superior cookware material. While anodized aluminum does take longer to heat up than other materials, it's an excellent heat conductor (superior to stainless steel), scratch-resistant, and lightweight yet very strong.

Cast Iron

Pros: Durable, inexpensive, naturally non-stick if properly seasoned, distributes heat evenly and retains heat well, imparts iron to foods (an added benefit for some), great for long, low simmering and browning. Cons: Cast iron is also reactive, and doesn't take well to acidic foods. It's also quite heavy, takes a long time to heat up, takes a bit more effort to clean and maintain. Another option? While we still prefer raw cast iron for skillets, enameled cast iron (cast iron coated in porcelain enamel) has all the benefits of cast iron without the extra trouble, so it's a great material for dutch ovens. It's non-reactive, easy to clean, and beautiful. Popular enameled cast iron brands include Le Creuset and Staub.

For those who are new to cooking, the first thing you need to know is this: you won’t get anything to brown in non-stick coated cookware. Stainless steel is the only way to go for beautifully browned meats, but there are some things to know about pans. Temperature is important, so learning to use your stainless is a good idea if you don’t want to ruin your food and destroy your pots. If you don’t know how to use them properly or how to manage the temperature, your food will stick to the pan or burn.

Here are some important tips about cookware.


  • Aluminum pans will actually leach into the food as it cooks. That’s why acidic foods such as tomatoes will keep your aluminum pans looking new.
  • Copper pots are used by professionals but are very expensive and difficult to maintain, and they’ll react with acidic foods.
  • Glass pots have poor heat distribution and food will burn.
  • Cast iron pots are porous and trapped grease can turn rancid. They’re heavy and cook well, but they’ll react with food and rust if not properly “seasoned” and maintained.
  • Coated pans, no matter how expensive or well made, will eventually chip off. What you don’t see before the actual chipping begins are the minute particles that wear off and lead to chipping.
  • The right types of utensils are needed for all types of pans, including stainless.
  • Stainless steel by itself is not a good heat conductor, so look for pans with copper or aluminum cores. Copper cores conduct heat very evenly, heat up quickly, and adjust to temperature changes quickly. Aluminum cores also conducts heat very evenly and is cheaper than copper.
  • Stainless pots come in various thicknesses, so buy the best you can afford. Cheap stainless steel pots without a copper or aluminum core will cook unevenly, giving you hot spots.
  • Stainless is durable and can maintain its appearance for as long as you own it (some stainless cooks have had their cookware for as long as 50 years).
  • Stainless doesn’t impart any flavor or create a chemical reaction with food.
  • Even the best stainless cookware will get tiny scratches if you use knives on them, but generally, stainless is resistant to scratches and dents.

What should you do when it comes to stainless?

Cooking is all about temperature shocks and exchanges. The reason a chicken is roasted at a higher temperature in the beginning is to shock the meat and create a nice, crispy and brown skin. The remainder of the roasting is done at a lower temperature. This same technique is used when cooking on the stove top.

So what’s the trick to finding the right temperature?

Never place food or cooking fat in a pan without preheating the pan. When you add your cooking fat, you should see it shivering somewhat in the pan. If your pan is too hot, the fat will smoke and burn. If this happens, discard the fat and start again. The pan will be very hot at this point so take it off the burner and let it cool a bit while you lower the burner and let the temperature regulate.

It’s best to heat the pan slowly over medium high heat so it can heat up evenly.

Use the water droplet trick

This is a great trick you can try in the beginning to get used to finding the right temperature. Heat your pan and place a small droplet of water into it when you think it’s hot enough.

If your pan is too cold, the droplet will bubble and evaporate very fast. Placing food in a pan that’s too cold will cause it to stick.

If the pan is too hot, the droplet of water will separate very fast into a lot of smaller droplets and move very fast in the pan. Carefully wipe the droplets and let the pan cool down a bit, then try again. If your pan is too hot, food will burn. Even high heat oils such as coconut oil will smoke because stainless conducts heat quickly.

When you’re near the right temperature, the droplet will split into smaller droplets of water and then evaporate.

At the right temperature, the droplet will stay intact and move around the pan, without evaporating, almost like a mercury ball. This is the time to add the cooking fat and then your piece of meat.
Swipe the water from the pan with a paper towel before you add the fat to avoid oil splatter.

You won’t find coated pans in restaurant kitchens. Cooking with stainless steel can produce some of the most fantastic dishes you’ll ever imagine. If you learn to use your pans correctly, you’ll never go back to anything else (check out the van der Waals force if you want to geek out on the physics of cooking). You’ll increase your range of recipes and make cooking and eating more enjoyable.

If you’re just starting out, here are the basic stainless steel cookware pieces you should have in your kitchen. They’re the sizes most often used by both professionals and home cooks.

One, two, and four quart saucepans with lids – These will be your workhorses.

Two to three gallon stockpot with lid – For soups, stock, pasta, and sauces.

Ten to twelve inch sauté pan with lid – A sauté pan (from the French sauter – “to jump”) has relatively high straight sides and a flat bottom. It’s used for making sauces, pan “frying”, and braising.

Ten inch skillet – A skillet (sometimes referred to as a frying pan) has sloped sides that taper in at the bottom. It’s used for eggs, omelets, frittatas or even pancakes.

Aluminum and cast iron conduct heat well, but may discolor food containing egg yolks, wine, vinegar or lemon. Enamelware is a fairly poor conductor of heat. Many recipes therefore recommend stainless steel or enameled cast iron, which do not have these faults.” –Time-Life Editors
The above quote comes from the recipe index of the Foods of the World cookbooks published by Time-Life in the 1970s. What this statement was hinting at, but not explicitly stating, is that acidic foods react with aluminum and cast iron. That reactions in aluminum pans are toxic is common knowledge among professional chefs and explains why they would never allow a cheap aluminum pan or pot of any kind in their kitchens.
But another underlying fundamental truth behind this statement is, “Why bother to forage for the best organic ingredients if, at the last minute, you compromise the quality of the final dish by choosing the wrong pot or pan to prepare it in?”
I started to notice the importance of being vigilant about what foods are prepared in after eating a tomato-based dish at an ethnic restaurant. My stomach churned for a few days and then I got a pain in my lower back–centralized over the kidneys. A savvy alternative practitioner pointed out that not only do acidic foods cooked in aluminum taste metallic, but there is a distinct possibility of heavy metal poisoning–which affects the kidneys. When I returned to the restaurant, I noticed aluminum pots hanging on hooks above the stove and have never eaten there again. You have probably heard of this principle without knowing it. This is why most foods are packaged in steel instead of aluminum. It is also why I caution against drinking sodas, which are acidic, and acidic juices like tomato and grapefruit from aluminum cans.
Another no-no is Teflon–a shortened term for tetrafluoride. Yes, that’s right, Teflon is a fluoride product and one that produces a toxic gas when heated to over 500°F. Most teflon product boxes contain a warning about this, although most people overlook the missive. A recent spot on ABC’s 20/20 highlighted how inhaling the fumes produced when a high-heat pan, such as one used to cook bacon, can cause an illness dubbed the Teflon-flu. The manufacturer, Dupont, has known about the “flu” for years and warns about it on its Web site–but not the product container.
Over the years, I have weeded out from my kitchen any poor-quality and toxic pots and pans, replacing them with high-quality stainless steel or enameled cast-iron cookware. I highly recommend All-Clad’s beautiful, yet dependable line of high-quality pots and pans for stovetop cooking. If you are throwing out your old collection, why not consider one of their starter sets in their basic stainless line? There are many offers, but most come with a combination of lidded saucepans and open frying pans–but do pass up the offers that include nonstick frying pans. If you have a little more to spend, their Cop-R-Chef line features exquisite copper exteriors and the safe, stainless steel interior cooking surface.
I recently bought All-Clad’s butter warmer–a cute pan designed for melting a stick of butter or two for popcorn or a recipe. My next purchase will be one of their stockpots which range in size from 4 to 24 quarts. All-Clad’s smaller Stainless stockpots are constructed of three layers: the whole pot is constructed of aluminum, for even heating, sandwiched between two layers of stainless steel; however, that line’s bigger pots only have the aluminum core on the bottom. Since I want a larger stockpot, I am looking at All-Clad’s better-quality LTD or Master Chef 2 16- or 20-quart stockpots, in which the aluminum core extends up the sides of the pot. Larger stockpots can hold a couple chickens and all the savory vegetables needed to make a beautiful, nutritious and versatile stock.
Another indispensable pot in my home is my enameled 5.5-quart Le Creuset Dutch oven with a lid. This is my choice for slow cooking a roast or stew on the stovetop. I have very fond memories of a friend of mine showing me how to make his favorite recipe–a pork and leek stew–in it just before he passed away. Since this pot is enamel-lined, it’s okay to cook acid-based foods in it, but always to be sure to use a wooden spoon–as metal can scratch the surface.
I occasionally cook with two kinds of glazed earthenware from Bulgaria. The first is a large, hand-thrown lidded pot for the oven called a gyuvech. It is used to make a meal of the same name–a rich combination of sausage and vegetables slow cooked in the oven. The second is an individual-serving-size version of the first called a gyuveche. It is used to make a meal of sausage, peppers and tomatoes topped at the last minute with an egg.
Despite the Time-Life Editors’ admonition against cast iron due to the possibility of its reacting with food, I highly recommend some pieces of Lodge’s non-enameled cast-iron ware–as long as you avoid acidic foods and preseason the pan as directed by the manufacturer. In fact, a good cast-iron frying pan or skillet is a great kitchen tool because it conducts heat so well. I use my 12-inch skillet for frying bacon. Lodge also makes some very nice griddles for making pancakes and tortillas, as well as cornbread pans in fun shapes like perch, cactus and corncobs.
Porcelain is a good choice for bakeware and German-made Villeroy & Boch is top of the line. If you only buy one or two pieces, start with Villeroy & Boch’s 10×14-inch lasagna pan, followed by versatile soufflé/casserole dishes that measure 7 3/4 inches wide and 3 1/2 inches deep. I use the “lasagna” pans for baking carrot cakes and roasting chickens.
The “soufflé” dishes are my choice for making rhubarb crunch, sweet potato casserole, potatoes Dauphinoise, and numerous other dishes.
To put farm-fresh eggs and cream to good use, Villeroy & Boch also makes ramekins for crème brûlée, but I prefer my 5-ounce French-made porcelain ramekins from Apilco. Williams & Sonoma sells a set of four Apilco ramekins in a gift box, along with a kitchen torch. (Don’t forget a bottle of butane to fuel the torch.) If you want to buy them individually, look for Apilco ramekin #1. You need to be alert when purchasing ramekins because there are quite a few inferior imitations on the market; many of them are made in China.
I make one exception to banning aluminum from my kitchen. For baking cookies and drying crispy nuts, I use professional-quality aluminum “half-sheets” by Chicago Metallic available through restaurant supply companies and through Sur La Table–but I always line the bottom of the pan with parchment paper to keep the food from touching the metal. To economize, I buy 1,000 parchment pan liners at a time, which are also available from restaurant wholesalers. One box usually lasts about four years.
Last, but not least, I cherish my Mauviel tarte tatin pan. It has a copper exterior, but a steel-lined interior, and is specifically designed for preparing a wonderful caramelized French apple dish of the same name. There are several different sizes and models of tarte tatin pans. I prefer Mauviel’s 11-inch 2.1-quart pan with “ear” handles. The handles make it easier to maneuver the pan on the stove and in the oven.
So make a New Year’s resolution to cast out the old–your old aluminum and Teflon-lined pots, pans and bakeware, that is–and then replace them with good-quality stainless steel, enameled or well-seasoned cast iron and porcelain.

Aside from stone, iron is the oldest cooking surface still in use. This provides evidence for its lack of obvious harm, but doesn’t necessarily mean it’s totally safe.

(You can’t just dig up pure iron from the ground. Pure iron is rare and mainly comes from fallen meteorites. And it's actually pretty soft, so not great for making pans without adding in some carbon for hardening. But still, around 97-98% of a cast iron pan is plain ol’ iron, which is why we’re so interested in its health effects. Our discussion also applies to carbon steel cookware (such as woks), which is made up of 99% iron.)

Cast iron and carbon steel pans are very similar in their makeup and kitchen use, so potential health concerns from cast iron pans also apply to carbon steel pans, which are also known as “blue steel” or “black steel” pans. 

Too much iron has been linked to a wide variety of conditions, such as Alzheimer’sheart disease, and colorectal cancer to name just a few. There’s a couple groups of people who don’t have to worry quite as much about iron overload though: menstruating women and vegetarians/vegans. But for others, especially those who regularly eat red meat, it doesn’t take much to push yourself into excess iron territory.

Iron is almost universally labeled as “good” among laypeople and even some health professionals. But too much iron is uniquely harmful, as the body cannot get rid of it, and iron has a tendency to produce free radicals. Thus, excess iron is linked to many diseases.

How much iron are we talking?

We’re talking a pretty decent amount of iron, depending on the condition of your cast iron pan, and what specifically you’re cooking.
To put it into context: men need 8 mg of iron a day, and a serving of tomato sauce cooked in a cast iron skillet can provide 5 mg of iron!

Cast iron pans can leach a sizeable amount of iron into your food, exceeding dietary intake in some cases. Acidic foods will contribute to much more leaching while an old, heavily-seasoned pan will leach much less iron than a newer one.

Stainless steel doesn’t leach much iron, due to its protective shield of chromium oxide. But it may still leach small amounts of other metals such as nickel, which some people have allergic reactions to.

Seasoning isn’t just recommended for cast iron pans, it’s a requirement. The seasoning layer is comprised of broken down then polymerized unsaturated fatty acids. Multiple thin layers of seasoning built up over time are a sign of a well-used and largely non-stick cast iron pan.

The pros of the seasoning process are numerous: you can eventually cook eggs without them sticking, you don’t have to re-season as often, the pan won’t rust, and you can get much cooking cred from your foodie friends.
The cons are harder to quantify. Bits of the seasoning will come off over time (and be replaced by more seasoning). Nobody knows exactly how much comes off over time, nor do they know what the health effects are of eating tiny bits of this type of broken down fat. If you heat the pan up fairly high over long periods, might carcinogenic fumes or free radicals develop from the oxidized oil? Would small amounts of these hypothetical byproducts even be of concern, given the natural antioxidant defenses our bodies employ?
Despite this uncertainty, you shouldn’t be overly alarmed. The flaxseed oil seasoning on your cast iron pan may be oxidized, but it’s not rancid. Meaning, it doesn’t impart undesirable odors or flavors (for the most part). This may seem confusing at first, since all the double bonds in a bottle of flaxseed oil mean that it can go rancid easily, when not refrigerated. This is because the double bonds are easily attacked by air and light, among other factors.
Seasoning is basically oxidized then polymerized polyunsaturated oil. The risks, if any, of eating tiny amounts of seasoning every day for years is unknown. But they’re probably not very large.
Even with all the options available, there is no perfect pan, given the wide variety of factors people look at. These include non-stickiness, searing ability, ease of use, even heating, and so on and so on. Cast iron does well with some of these and poorly with others.
The decision to choose cast iron or a different cooking material depends on a variety of personal preferences, including risk aversion, what you enjoy cooking with, and what you already own. Trying out more than one type of pan may be wise, or even using more than one type of pan on a regular basis, depending on what’s best suited for the job at hand.

I have used iron skillets for years.  Some belonged to my Mother.  A friend asked me if it was safe to use because of the iron in the skillet.  I told her I have been eating from them and using them for years & never heard anything about the iron in the skillet not being safe.  Please let me know.  Thank-you for your informative care of the skillets. – Brenda Weldon (12/16/05)

Answer: 
Yes, cooking in a cast iron skillet can add significant amounts of iron to your food and into your body… if you eat it. This was proven by researchers who tested 20 foods, the results of which were published in the July 1986 issue of the Journal of the American Dietetic Association.  They measured the iron and moisture content of these items when raw, and after cooking in an iron skillet and a non-iron (Corning ware) dish, separately.  A new, seasoned iron skillet was used, in the event prior use might have affected iron absorption.  The researchers also compared iron absorption when using a new iron skillet versus an older one.

What's the difference between an iron pan and a cast iron pan?

I avoid most single-use equipment and don't believe in using matched or bad knives. And if you cook, you get to decide what's for dinner, and maybe somebody else will clean up.

The most important difference is how the pans get their shape.

Wrought iron (normal flat sheet of iron)

A pan that is simply described as iron might be smelted and then poured into a lump (or "pig") of iron that is re-melted with other chemicals, poured and rolled ("wrought) into a flat sheet of iron, heated to make it malleable, and then hammered or pressed (again, wrought) by a stamping machine into the shape of a pan.

Cast iron (alloyed with carbon)

Alternatively, the pig iron might be re-melted, alloyed with other forms of iron, and poured ("cast") into a mold to make a cast iron pan.

Possibly "iron pan" without "cast" does not refer to cheap pressed iron which needs to be coated, but to a wrought iron pan, which can, as cast iron, be used to produce the finest cookware without any coating.

Both cast iron and wrought iron work great with seasoning

Jonas, what you forgot to mention is that when cast iron is not enameled or coated it works like a dream when it is seasoned properly (same with wrought iron). Which is easy to achieve and preserve.

Cleaning with salt and hot water, no soap

I use an ordinary scraper, salt and kitchen paper for my wrought iron pans (sauté meat and vegetables; try chip potatoes and fried eggs) and hot water with no soap, a hard brush and kitchen paper for my cast iron cookware (braise, make sauces, one-pot-dishes etc.). Might be that cleaning iron cookware takes some more seconds, compared to smashing you steel pots into the dishwasher, but you are generously compensated for this ridiculous extra-effort by an unbelievable non-stick, make-brown-and-crisp equipment.

Cast Iron is a very specific alloy containing 2-4% by weight carbon and 1-2 percent by weight silicon to coke iron. While this isn't an issue in kitchens where temperatures very rarely exceed the 1,200 degree celsius threshold, cast iron has a very low melting point which expresses itself in its ability to form and release polymer bonds.

"Regular" iron cookware is often not cast but made from sheet iron and pressed into form. Since the amalgam in regular iron pans does not form ready polymer bonds or release them, those cookwares need to be coated or enameled to create a useable surface.

The good news is, that you don't have to season enameled or coated cookware since the desired effect is inherent in the coating (stick or non-stick). Cast Iron, however, works poorly when unseasoned and requires a coating with oxidized oil which creates a hydrophobic layer for non-stick reasons.

Simply put, Iron is the pure metal and Cast Iron is an alloy of Iron and more than 1.5% carbon (steel is an alloy of iron and less than 1.5% carbon)

Iron is soft and becomes even softer when heated, so it doesn't make for good pots and pans.

Adding from about 0.3% -1.5% carbon takes you into the realm of the iron alloy, steel. The lower to the higher percent of carbon produces a softer to harder steel.

More than 1.5% of carbon produces the iron alloy, cast iron. It is harder than steel but comparatively brittle. In spite of its being somewhat brittle, cast iron is an excellent material for pots and pans because it evenly diffuses and retains heat. The drawback is that iron rusts, so the pots and pans must be coated with oil and baked. This protects the bare iron from the oxygen which causes rust.

I have a number of cast iron pots and pans that were my great grandmother's. I guess those before me treated them well because they are like new. Very very heavy though.

Sorry for the long review - for the short review, count the stars!

I'm a bit of a purist. I always season my cast iron - new, or used (hey, I don't know WHAT someone else used that old piece of cast iron for - maybe cleaning auto parts). I sand it down to bare metal, starting with about an 80 grit and finishing with 200.

Then I season. The end result is a glossy black mirror that puts Teflon to shame. There are two mistakes people make when seasoning - not hot enough, not long enough. These mistakes give the same result - a sticky brown coating that is definitely not non-stick, and the first time they bring any real heat to the pan, clouds of smoke that they neither expected or wanted. I see several complaints here that are completely due to not knowing this.

But there were a few pieces I needed (yes, needed, cast iron isn't about want, it's a need), and this was one of them, so I thought I'd give the Lodge pre-seasoning a try. Ordered last Friday, received this Friday - free shipping, yay!

The first thing I noticed was the bumpy coating. The inside is actually rougher than the outside, and my hand was itching for the sandpaper, but that would have defeated the experiment. This time, I was going to give the Lodge pre-seasoning a chance before I broke out the sandpaper. So I scrubbed the pan out with a plastic brush and a little soapy water, rinsed well, put it on a medium burner, and waited. Cast iron tip number one - give it a little time. Then give it a little more time. Cast iron conducts heat much more slowly than aluminum, so you have to have a little patience.

Then I threw in a pat of butter, and brought out the natural enemy of badly seasoned cast iron - the egg. And, sure enough, it stuck - but not badly, just in the middle. A bit of spatula work and I actually got a passable over-medium egg. Hmmm. But still not good enough. So I cleaned up the pan, and broke out the lard.

I have only one justification for using lard. I don't remember Grandma using refined hand-pressed organic flax oil, or purified extra-virgin olive oil made by real virgins. Nope, it was pretty much animal fat in her iron. A scoop of bacon grease from the mason jar beside the stove and she was ready to cook anything. Grandaddy wouldn't eat a piece of meat that had less than a half-inch of fat around it. "Tastes like a dry old shoe.", he'd declare if it was too lean. In the end, I'm sure their diet killed them, but they ate well in the meantime. Grandaddy was cut down at the tender age of 96, and Grandma lasted till 98. Eat what you want folks - in the end, it's pretty much up to your genetics.


So I warmed up my new pieces, and smeared a very thin layer of lard all over them - use your fingers. Towels, especially paper towels, will shed lint, and lint in your seasoning coat doesn't help things at all. Besides, it's kinda fun.

Here's cast iron tip number two - season at the highest temp you think you'll ever cook at - or higher. If you don't, you won't get the full non-stick thing, and the first time you bring it up to that temp you'll get clouds of smoke from the unfinished seasoning. I put my pieces in a cold oven, and set the temp for an hour at 500 degrees (F, not C). Yeah, I know, Lodge says 350. Lodge doesn't want panicked support calls from people whose house is full of smoke. Crank the heat up.

You have two choices here. You can put a fan in the kitchen window and blow smoke out of your house like the battleship Bismarck under attack by the Royal Navy, or invest in an oxygen mask. You will get smoke. You will get lots of smoke, especially if you're doing several pieces at once, like I just did. This is a good thing - that's smoke that won't be jumping out to surprise you the first time you try to cook with any real heat. The goal is to heat until you don't get smoke, and in my experience, 500 degrees for an hour does that pretty well.

Let the pieces cool in the closed oven. Then re-grease and repeat. And repeat again. And don't glop the fat on. Just enough to coat. More thin layers are better than fewer gloppy layers. I managed four layers last night without my neighbors calling the fire department.

Seems like a lot of work? Look at it this way. It's a lifetime commitment. Treat your iron well, and it will love you right back like you've never been loved before. And this is pretty much a one-time deal, unless you do something silly.

The end result of my all-night smoking up the kitchen exercise? Dry, absolutely no stickiness, black as a coal mine at midnight and shiny - but still bumpy - could it possibly work with that rough surface?

I put the skillet back on a medium burner, put a pat of butter on and tossed in a couple of eggs. After the whites had set a little, I nudged them with a spatula, and they scooted across the pan. I'll be... it works. My wife came back from the store and wanted scrambled eggs. If there's anything that cast iron likes less than fried eggs, it's scrambled. But it was the same thing all over again. No stick. No cleanup. Just a quick hot water rinse with a brush in case something got left on the pan (I couldn't see anything, but hey), then I put it on a med-hi burner till dry, put a thin coat of lard on the pan and waited until I saw smoke for a minute. Let cool and hang up. Done.

So. do I like the bumpy texture of the Lodge pre-season? Nope. Does it work? Yes, and contrary to my misgivings, it works very well. My wife pointed out that even some Teflon cookware has textured patterns in it. The Lodge pre-season isn't a perfect surface out of the box - but it does give you a big head-start. After a night's work, my iron is ready to face anything, and you just can't beat that.

Lodge makes a great product. For the quality, durability, and versatility, you can't beat Lodge cast iron. Plus, it's made in America. I like that. If you've never experienced cast iron cooking, you've just been cheating yourself. Plus, the price, for a piece of lifetime cookware, is insanely cheap.

And my sandpaper is still on the tool shelf.

I own several Lodge cast iron products and use them everyday. I have 3 teeneage boys that enjoy cooking, and after they destroyed a few teflon coated pans, I decided I would go heavy into cast iron. These pans are indestructible. You can use them in the oven or stovetop, and if you keep it seasoned properly food will not stick. Also, to avoid sticking problems, you may want to remember to allow the pan to get hot before applying oil or food.
As to seasoning, the Logic line now comes preseasoned. But don't make a big deal about this. To season a cast iron skillet simply coat it lightly with oil and bake it for a half hour or so. I have also seasoned these skillets on the stovetop. Cast iron is also great because it does not easily scrap like stainless steel and aluminum pots. Aluminum pans are painful to me, as my teeth fillings react to the aluminum. With cast iron, you won't have this problem. I also take my Lodge pan camping and set it right over the coals to cook. No melted handles or scorched bottoms to mess with.
