You realize that the potato is a New World crop that's been around in Europe for only a few hundred years, right?
But they're precisely NOT empty carbs, that's the whole point. They're a fucking miracle crop. They could grow in the dirt poor soil of western ireland, they don't require processing/grinding in between harvest and table, they're underground so they survive when armies tramp by... and they're CHOCK FULL of micronutrients. The perception that they are empty carbs is simply wrongheaded. I read somewhere that a diet of potatoes, some oats, and whole milk (basically the diet of 7-8 million irish ppl pre-famine) gives you all your essential nutrients
Asked my American girlfriend about this and she said in the US they do because people never eat plain potatoes. If they're baked they add cheese, bacon, and sour cream. Mashed potatoes have butter and cream. Fries are, well, fried.
