Goats are more active and prefer leaves from higher locations while sheep graze grass and are less active. Goat meat is softer and less smelly than sheep meat. In western countries, compared to India, sheep meat is more common.

I personally prefer the taste of goat meat over sheep meat. I always felt sheep meat is more red than goat meat. Eating sheep meat also feels like closer to beef. (I like beef and sheep meat both to be clear).
The key difference is the diet of goat and sheep. Sheep are grazers. Their primary diet is grass. Goats are browsers. Their primary diet is leaves/greens/shrubs/trees and finally the top of grass. So you can see a certain unique flavor and taste to goat meat.
You either love it or don’t like it! Goat meat is certainly a very healthy choice.
My grandma always like sheep meat. She told me it keeps her healthy.

Traditionally goat has always been the choice of meat ( if you leave wild animals aside) .
Chicken , which is now the most popular non veg dish , was until recently frowned upon for being dirty and unhealthy. Even today some conservative meat eating communities stay away from chicken, though the stigma is slowly lifting.
What is interesting is that goat is now accepted as the most healthiest meat, even more so than chicken and certainly more than lamb or beef.
The whole concept that white meat is healthier than red meat has been proved wrong in case of goat. In fact chicken meat can actually cause certain e-coli related diseases as it is found that most farm chicken consume fecal matter.

Goat meat is actually very good for your health compared to many other traditional types of meats available in the market.
What really makes goat meat so unique is the ability of goat to digest up to 600 different types of herbs. That is more than can do sheep and cow.
Goats get sick more rarely than other animals and they don’t get helminthic disease (belly warms). Moreover goat meat contains less fats and more water.

What goat breed produces the most delicious and nutritious meat?
A highly subjective question for the taste of each person varies depending on past experience.
Each area has a specific preference for a particular type of goat. This is the reason, why I do NOT advocate translocation of goat breeds from one area to another purely for the reason of higher weight. For example, Boar goats imported from abroad into India for mating with Indian goats and provide higher weight gain have clearly been rejected by the consumer in terms of its taste.
Higher weight gain can easily be attained in goats of local breeds by proper deworming regularly and a little feed supplement with salt in the evening and the use of a very good buck.
Within the breed also, there is a specific preference for male (young or old) chevon (goat meat). Even in Male, there is a segmentation apart from age which is castrated or not castrated. So, the possibilities of market segmentation is very high.
This is the reason goat rearers never ever eat goat meat that is sourced from the market for they aren’t sure whether it is male or female, whether it is truly chevon or mutton (sheep meat), whether it is the breed they rear etc. etc.
Unfortunately, the urban consumer does not know these nuances and is also forced to eat what is provided as “mutton”. Sometimes, even veal (calf meat) is also sold as “mutton”.
So, there is no one goat which is more delicious.
As regards nutrition, it is near same.

Being in india, what you usually get is goat meat. Mutton is goat, defacto.
That said, ive had sheep meat, and i dint mind it. There is a big big difference and one needs to acquire the taste.
Unfortunately, everyone with me, when we were eating sheep meat disliked it. But i think that was because we had Mutton mandi rice which is basically boiled/steamed meat. (my note - eithopian king said boiled meat)
